Personal Information

He Weiwei received his Ph.D. in Food Science from Aarhus University, Denmark in 2022. In 2023, he joined Nanchang University and was selected for a provincial-level talent program. His primary research focuses on the regulation of food-derived and gut-derived harmful metabolites, fermented foods, and the development of dietary fiber-rich foods. He has led 7 research projects, including the National Natural Science Foundation of China (Youth Program), the Jiangxi Provincial Natural Science Foundation (Youth/General Program), the Provincial Early-Career Young Scientist Training Program, a sub-project under the Provincial Agricultural Key Research Initiative, the Ganpo Talent Support Program, and industry-sponsored technical collaborations. He has published over 40 SCI papers. Among these, more than 10 papers have been published as first or corresponding author in internationally renowned journals such as The Journal of Clinical Endocrinology & Metabolism (a Nature Index journal; one of his papers was highlighted separately in Nature Reviews Endocrinology, IF=40.5), Journal of Agricultural and Food Chemistry, Food Chemistry, Carbohydrate Polymers, and Molecular Nutrition & Food Research.
