2022年毕业于丹麦奥胡斯大学食品系获理学博士学位。2023年入职南昌大学,并入选省部级人才项目。主要研究方向:食品与肠源性有害代谢物调控、发酵食品以及富含膳食纤维食品开发。主持科研项目7项包括:国家自然科学基金(青年)、江西省自然科学基金(青年/面上)、省职业早期青年科技人才培养项目、省农业攻关项目子课题、赣鄱俊才支持计划、横向技术委托等。发表SCI论文40篇。其中,以第一/通讯作者在The Journal of Clinical Endocrinology and Metabolism(自然指数期刊,且该论文被Nature Reviews Endocrinology , IF=40.5, 作为研究亮点进行单独报道),Journal of Agricultural and Food Chemistry, Food Chemistry, Carbohydrate Polymers,Molecular Nutrition & Food Research等国际知名期刊发表SCI论文10余篇。手机号:13794397472;邮箱:weiweihe_fs@ncu.edu.cn。
