Personal Information
Mingyue Shen currently works at the State Key Laboratory of Food Science and Resources, Nanchang University. Her main research directions are the chemical and biological characterization and health effects of functional substances in food resources, as well as the generation mechanisms and control strategies of thermal processing hazards in food. She has published 155 papers in SCI journals, with over 6,400 citations and an H-index of 62. In the past five years, She has published 45 SCI papers as the first or corresponding author (including co-authors). She has been selected as a "Highly Cited Scientist" by Clarivate Analytics for three consecutive years (2021-2023).
