申明月,研究员,博士研究生导师,主要研究方向为食品化学与营养、食品安全。

近年来,主持4项国家自然科学基金项目,以及3项江西省自然科学基金项目;同时作为主要骨干参与完成了“十三五”国家重点研发计划课题、“十二五”国家科技支撑计划项目等。发表 SCI 期刊论文149篇,论文被引6100余次,H 指数43。其中,近5年以第一或通讯作者(含共同)发表 SCI 论文 45 篇,其中SCI一区论文32篇,IF大于10的论文10篇,封面论文2篇,ESI高被引论文2篇。授权国家发明专利8件,积极与企业开展产学研合作,参编国家级教材2部(十二五国家规划教材1部),参编《食品加工过程安全优化与控制》等专著,受邀担任科技部项目评审专家和国家自然科学基金委生命学部项目函审专家以及《Journal of Agricultural and Food Chemistry》、《Food Hydrocolloids》、《Food Chemistry》等多个SCI期刊的审稿专家等。获江西省自然科学奖二等奖两项(分别为第二、第一完成人),2021-2023年连续入选科睿唯安全球“高被引科学家”。

学术成就

本人的研究集中于“食药同源”食品活性成分的化学生物学表征及健康效应、食品热加工危害物的生成机制和调控策略两大方向。在“食药同源”食品活性成分的化学生物学表征及健康效应方面,本人围绕灵芝、山药等特色“食药同源”食品,建立了这些特色“食药同源”食品中多糖、蛋白肽、甾醇等活性成分的分离技术,解析了活性组分的化学结构,并利用多组学技术结合分子生物学揭示了上述物质抗炎、免疫调节等生物活性的分子机制。

而在食品热加工危害物的生成机制和调控策略方面,本人从理论深度研究了热加工食品中多种危害物的同步形成及相互作用规律,并建立了相应的减控技术。建立了油炸薯条、罐装果酱、肉制品等热加工食品体系中丙烯酰胺、5-羟甲基糠醛、杂环胺、呋喃等危害物的同步分析方法,研究了上述热加工食品中食品组分、热加工方式与多元危害物生成的关联,揭示
了多元危害物的伴生关系和形成途径。在此基础上,开发了既能同步抑制多种危害物的形成,又能保持热加工食品感官品质的内源性及外源性控制方法和技术。
