Personal Information

     Dr Peng mainly focuses on oil processing, microbial fermentation, and the high-value comprehensive utilization of by-products from grain and oil food processing.

In recent years, Dr Peng has presided over nearly 20 projects at national, provincial, departmental and enterprise-commissioned levels, published more than 70 academic papers as the first author or corresponding author in domestic and foreign academic journals, compiled 4 textbooks as the chief editor or associate chief editor, won 4 provincial or departmental-level scientific and technological awards, 4 provincial or university-level teaching achievement awards, and obtained 5 authorized patents. Over the past 5 years, the author has been mainly committed to solving technical problems and tackling key technical issues for enterprises in related fields, maintaining close cooperation with enterprises.

     Dr Peng has delivered academic reports at many important domestic and international academic conferences, and holds the following academic and social positions: "Vice Chairman of the National Innovation Alliance of Southern Woody Oil Industry under the National Forestry and Grassland Administration", "Standing Member of the Bamboo Professional Committee of Jiangxi Forestry Society", "Peer Review Expert of the National Natural Science Foundation of China", "Expert in the National Postgraduate Education Evaluation and Monitoring Expert Database of the Ministry of Education Degree and Graduate Education Development Center", "Agricultural Science and Technology Commissioner of Jiangxi Province", and "Project Evaluation Expert of the Jiangxi Provincial Science and Technology Achievement Transfer and Transformation Service System". Dr Peng has also been selected as a participant in the 4th Batch of "Hundred Doctors Serving Hundred Enterprises" Special Action in Ji'an City, a participant in the "One Enterprise with One Doctor" Scientific and Technological Talent Service Action in Nanchang City, and a "Science and Technology Deputy General Manager" of Jiangxi Province in 2025. Additionally, Dr Peng is a member of the Biomass Professional Committee of the China Renewable Energy Society, the Chinese Chemical Society and the Jiangxi Forestry Society, as well as a regular reviewer for domestic and foreign academic journals including "Industrial Crops and Products", "Carbohydrate Polymers", and "Chemistry and Industry of Forest Products".

     The author teaches the undergraduate core courses "Food Factory Design and Environmental Protection" and "Food Factory Curriculum Design", as well as the postgraduate courses "High-tech in Food Engineering" and "Modern Microbiology Technology".
