Rooted in the planning of the "Healthy China 2030" initiative, and focusing on the increasingly serious major chronic diseases amid urbanization, the main research directions are food protein chemistry and nutrition, as well as the health effects and mechanisms of food-derived active molecules. Systematic and forward-looking basic research has been carried out in the field of nutrition and health. Natural active ingredients with anti-inflammatory, anti-atherosclerotic and anti-diabetic effects have been screened and prepared from food and herbal medicines with both food and medicinal values. From the perspective of structure-activity relationship, the molecular mechanisms by which these active ingredients exert their effects have been revealed, providing new ideas for target mining in the prevention and treatment of major chronic diseases. In addition, centering on the development direction of the food and big health industries, multiple horizontal research projects on the intestinal absorption mechanism of food-derived active components have been carried out in cooperation with many well-known companies inside and outside the province. A number of organic metal chelate products with high intestinal absorption rate have been developed, achieving remarkable results in transformation.
